The first course of blogging

Welcome to The Yellow Apron Experiment!  This is my first post, or as the title says, a first course, to my blogging experiment.  I love real, healthy food and want to share that enjoyment with my many followers.  Although, at this point that is probably just my family and close friends...

Now to jump to the "meat" (or tofu) of it, my first recipe.  This recipe comes from my favorite chef extraordinaire, my mama.  She is the one who taught me how to cook, how to love, and how to laugh: all vital ingredients to a wonderful life.

Stuffed Peppers:

~1 pound of ground turkey (I like the organic kind, 99% fat free)
~1 cup of shredded carrots
~2 small cans of mushrooms
~half a white onion chopped
~half a package of chopped frozen spinach
~one package of brown rice (I like the Uncle Ben's 90 second rice)
~4 peppers (any color you like - my vote is for the yellow or orange kind!)
~1 can of tomato sauce
~crumbled goat cheese (optional)
~seasonings:  garlic powder, basil, salt

Combine all ingredients in a large bowl (except for the peppers).  Season to your own desire.  I always have a heavy hand when it comes to the garlic.  I mean you have to ward off those vampires somehow...  Well, except for the Cullens of course (for you Twilight fans out there!).

Cut the stems off the peppers and hallow out the insides.  I like to rinse them after cutting off the top to get rid of the few stray seeds.  Fill the peppers with the ground turkey mixture.  When I made them tonight, I had enough to make two patties for burgers another night.  Cover the peppers with foil and bake at 350 degrees for about 45 minutes.  Be sure to take the foil off for the last 10 minutes.  If you are feeling wild, top the peppers off with some goat cheese crumblers.

I served this with Rosemary Focaccia from The New Moosewood Cookbook.  Top the meal off with some mint water (with fresh mint from my little indoor garden) and call it a good meal.

  1. Becky, congratulations on your new blog. Looks like you're off to a tasty start! I've been at it for 17 months now. Would never have made it if I had tried to blog every day or several times a week as so many do. Once a week I can do! (PS My husband used to be a math teacher.)
